What an awesome post and I agree the chicken shape is an amazing way to display your Maori foods. Have you ever tried any of the Maori foods you have listed? I really love kumara, especially when it is cooked in a Hangi. When I was younger we used to go to a place called Okarito, and we would have a hangi on New Years Day. It was so much fun watching the hole being dug and seeing the steam rising as the food was cooking.
